Potatoes and Eggs

I made a big batch of potatoes and eggs this morning for breakfast.  It's a great meal for breakfast or dinner. My mom used to make it for dinner and we would make sandwiches out of it on Italian bread.

Ingredients:

olive oil
butter
salt
black pepper (if desired, I don't like it)
onion
red potatoes or any potatoes of your choice
eggs

Coat a large frying pan with olive oil and a large pat of butter.  Heat on high.  Chop onions very small and add to pan, stirring often.  You may need to lower the heat to medium.  Cook onions until browned.

Wash potatoes and poke small holes into it with the tip of a steak knife, so it doesn't explode in the microwave.  Cook in microwave until soft (if you can stick the tip of the knife into the middle, it's done.)  I don't peel my potatoes and prefer to use red potatoes, however, you can use any type of potato you like and you could peel it if you desire.  When potato is softened, cut into small pieces and add to onions.  You may need to add a little more olive oil or butter.  You may need to raise the heat a little if you lowered it earlier. Stir often.  Let potatoes brown.

Beat your eggs.  Be sure to beat enough eggs to cover the potatoes and onions and fill the pan completely.  Add salt to eggs and black pepper if desired (I don't like black pepper so I don't cook with it, I let people add it upon serving).  Pour eggs into pan with potatoes and onions.  Let egg mixture set a bit, then gently stir. Cook until egg mixture is dry.  Serve and enjoy.
