Healthy Breakfast

Hubby and I are on a mission to lose weight.  We are using http://www.myfitnesspal.com/ and it's wonderful.

This morning I made a nice breakfast of peppers, onions and eggs and it was only 234 calories, whoo hoo.

Healthy Breakfast

Ingredients:

1 cup chopped red bell pepper (measured raw)
1/2 cup chopped white onion
2 large eggs

Coat a small frying pan with water.  Cook onions and peppers, adding water a little bit at a time as needed.  When onions and peppers are soft let water cook down.  Give two small sprays of Pam non stick spray and add in two large eggs (beat eggs slightly)

Cook until eggs are dry stirring often.  Peppers and onions will crisp up..

A great way to start off with some protein in the morning which helps you to stay more full.  It's also gluten and nut free for those who, like myself, suffer with these types of allergies.

Serve and enjoy.
