Lunch - Chicken Salad

Chicken Salad

Ingredients:

Fresh spinach - 2 cups
Romaine lettuce - 2 cups
canned chicken breast - 1/3 cup
chick peas - 1/3 cup
1 large hard boiled egg - chopped
Wishbone fat free Ranch dressing - 4 tbsp

Combine ingredients, stir well and enjoy!

I love salads, especially in the summer time.  They are light, yet filling.  They also contain just about everything you need in your diet within one bowl, which is wonderful.  I had plenty of protein, some carbs and of course vitamins from green, leafy vegetables.

Healthy Breakfast

Hubby and I are on a mission to lose weight.  We are using http://www.myfitnesspal.com/ and it's wonderful.

This morning I made a nice breakfast of peppers, onions and eggs and it was only 234 calories, whoo hoo.

Healthy Breakfast

Ingredients:

1 cup chopped red bell pepper (measured raw)
1/2 cup chopped white onion
2 large eggs

Coat a small frying pan with water.  Cook onions and peppers, adding water a little bit at a time as needed.  When onions and peppers are soft let water cook down.  Give two small sprays of Pam non stick spray and add in two large eggs (beat eggs slightly)

Cook until eggs are dry stirring often.  Peppers and onions will crisp up..

A great way to start off with some protein in the morning which helps you to stay more full.  It's also gluten and nut free for those who, like myself, suffer with these types of allergies.

Serve and enjoy.

Summer Stew

I made a nice summer stew filled with veggies, protein and a few starches.  It's light and airy and delicious!

Summer Stew

Ingredients:

olive oil
salt
red pepper
basil
potatoes
garlic cloves
sweet Italian sausage
grilled chicken breast (boneless, skinless - cut into small pieces)
peppers (red, yellow, green, orange)
onions (sweet and red)
peas



Coat a frying pan with a small amount of olive oil.  Cut potatoes into small squares and add to hot oil (medium heat) in frying pan.  Stir to coat the potatoes with the oil.  Chop up about four or five garlic cloves into small pieces.  Add to pan and give a good stir.

Remove sausage from casing and chop into small pieces.  Add to frying pan, stir well.  Add  red pepper to taste. Let sausage brown.

Add peppers and onions to pan.  Let them soften. Add salt and fresh basil, stir well.

Add chicken breast.  Stir well and allow mixture to cook until sausage and chicken are browned and veggies are softened.  Add frozen peas. stir well and cook until peas are soft.

Serve and enjoy!

Avocado and Salsa

I have been very, very busy the last few weeks.  Tonight I made a quick meal in less than 15 minutes and it was absolutely delicious!

Avocado and Salsa

Ingredients:

1 Avocado
Salsa of your choice (I used Tostitos mild)
1 bag of brown rice
boneless pork chops

Cut avocado, pit and scoop out into a bowl.  Stir until smooth or to the texture you desire. I left it a little chunky.  Add salsa and blend well with spoon.

Grill pork chops on grill (I used my George Foreman) or you can barbeque or cook in a pan!

Cook rice per directions (90 seconds in microwave)

Put avocado and salsa mixture over rice and pork.  In less than 15 minutes you have a delicious meal.  Enjoy!
