The Ultimate Omelette

It is a gorgeous spring day here in New York.  I wanted to make a nice, big, quick breakfast then head out for a long walk with the dog!  So I decided an all-in-one dish was the way to go, quick, easy, and easy clean up.

I made... the ultimate Omelette

Ingredients:

scallions
onions
peppers (red, green, yellow)
breakfast sausage
red potatoes
butter
egg whites
2 eggs (whites and yolks)\
American cheese


Chop scallions, onions and peppers into small pieces. Spray a frying pan with some non stick cooking spray. Cook scallions, onions and peppers on low heat, stirring often. Precook sausage in microwave then cut into small pieces and add to frying pan.  Add a small amount of butter if pan is getting too dry.  Cook red potato in microwave until soft.  Cut into small pieces and add to mixture.  Let cook until all ingredients are hot and softening.  Add egg whites and two eggs with cheese.  Cook until eggs are dry.  Hubby likes it with a little salsa on top or ketchup.  One can add black pepper as well.  Serve and enjoy!
