Super Bowl Chili

It was definitely an adventure buying the ingredients for this Chili yesterday.  Luckily, the making of the Chili went a bit more smoothly!

Super Bowl Chili:

Ingredients:

ground beef
onion
extra virgin olive oil
crushed tomatoes
kidney beans
pink beans
baked beans
corn
salt
red pepper




Chop onions into thin small slices.  Heat a small amount of olive oil in a sauce pan.  Add onions and stir, cook on medium heat.  Add ground beef and stir together.  When beef is browned, add in crushed tomatoes.  Season with salt and red pepper.

Rinse kidney beans and pink beans under cool water.  Add beans to pot, add in baked beans and corn, stir and cover partially.  If sauce seems thin add in some tomato paste and season with a small amount of sugar or sugar substitute to counteract bitterness from paste.  Let mixture simmer on low heat, partially covered, stirring fairly often.

Serve in various styles... over rice, topped with sour cream and shredded cheese, with chips or any combination of the above.  A great Super Bowl Sunday dish, especially on a cold day in New York!
