Mustard Chicken and Beans

Mustard Chicken and Beans


extra virgin olive oil
chicken cutlets (cut into bite sized pieces)
onions (chopped small)
garlic (chopped small)
red pepper
string beans
navy beans
yellow mustard

Coat the bottom of a frying pan with a small amount of extra virgin olive oil and heat.  Add onions and garlic and cook on medium heat.  Add red pepper and salt.  Add chicken pieces and cook until chicken is browned and onion and garlic are soft and browning. Season with oregano.  Add string beans and cook until beans are tender.  Add navy beans (rinse in colander under cool water).  Add yellow mustard, go light as it has a strong flavor.  Let navy beans and mustard heat and blend.  Stir often.  Serve and enjoy.
