Ground Turkey Meatloaf and Mashed Sweet Potatoes and Pears

Tonight I decided rather than make meatballs in red sauce, I would instead make meatloaf.  Check out my pictures and videos below for the meatloaf and the mashed sweet potatoes.  Be sure to check out my intro. - link at end of post.

Ground Turkey Meatloaf:

Ingredients:

Ground turkey
Turkey bacon
Garlic Powder
Onion Flakes
Parsley
Ketchup
Yellow Mustard
Egg
Half and Half

Mix ground turkey with all ingredients above.  I judge by eye, so, season to taste.


Shape meatloaf and put into pan.  Slightly grease bottom of pan with cooking oil.  Cover and cook at 350 degrees.  Check after 45 minutes to an hour.  Baste and add liquid (water) if necessary.  Uncover and cook until nicely browned.  About 10 minutes prior to pulling the meatloaf out of the oven, add bacon strips on top.

Let meatloaf set in pan on top of the stove for a few minutes, transfer to serving plate gently, slice and serve.









Mashed sweet potatoes:

Ingredients:

Sweet potatoes
Butter
Sugar Free Maple Syrup
Cinnamon
Pears (fresh or canned)




Peel sweet potatoes, cut into small pieces.  Try to keep the pieces close to the same size.  Add butter, put plops of butter atop the potatoes, and microwave for 10 minutes.  Stir and microwave another 10 minutes.

Put potatoes into a mixing bowl.  Add sugar free maple syrup and cinnamon. Mix until smooth.  Put mixture back into serving bowl, spread out evenly, top with pears (I used canned pears in light syrup and drained all the liquid) however, you can use fresh pears.  If you use fresh pears, cook in microwave or oven util soft.. Drizzle  some maple syrup on top of the pears.

Just before serving heat in oven at 350 degrees for a few minutes, to warm the potatoes and pears.

I served with a salad of Romaine lettuce with fat free Ranch dressing.
